Ideal brewing temperature for this tea is 80-90ºC. For food safety reasons, it is recommended to use boiling water; or boil the water and let it cool down to 80-90ºC.
Hot:
Tea leaves: 2g or 1 heaping Perfect Tea spoon
Hot water: 200 - 250ml @ 80ºC - 90ºC
Steep time: 3 - 5 mins
Iced:
Tea leaves: 4g or 2 heaping Perfect Tea spoons
Hot water: 250ml @ 80ºC - 90ºC
Steep time: 5 mins
Fill a 450ml glass with ice and pour the hot tea over the ice, straining the tea or removing the tea bags. Sweeten to taste.
Cold Brew:
Tea leaves: 10g
Cold water: 1000ml
Steep time in fridge: 5 to 24 hrs
The taste from steeping 8 hours onward will remain roughly the same. Thereafter, you can strain off the leaves and keep them for another steeping or two.
